SWEET POTATO MASH

4 LARGE SWEET POTATOES (2#)
1/4 TEASPOON SALT
1 TABLESPOON BUTTER OR MARGARINE
2 TABLESPOONS MILK
1/3 CUP PLAIN GREEK YOGURT

TOPPING:
2 TEASPOONS SPLENDA OR SUGAR SUB
2 TEASPOONS BUTTER
2 TABLESPOON PECANS, FINELY CHOPPED

HOW TO MAKE IT:

WASH AND PEEL SWEET POTATOES. CUT INTO CUBES THEN BOIL IN SALTED WATER FOR
10-12 MINUTES OR UNTIL SOFT. DRAIN AND MASH POTATOES. ADD BUTTER, MILK, AND
YOGURT. MASH UNTIL WELL COMBINED.
WHILE POTATOES ARE COOKING: IN SMALL SAUCEPAN, HEAT TOPPING INGREDIENTS
UNTIL SUGAR IS DISSOLVED. TAKE OFF HEAT AND HOLD FOR TOPPING.
POUR INTO 2 QUART SERVING DISH. TOP WITH PECAN MIXTURE AND SERVE
