HEALTHY RECIPES: Halloween Stuffed Mummy Peppers

Mummypeppers

24 sweet peppers,  stems removed, halved
1 cup black beans drained and rinsed
1/2 cup mozzarella cheese cut into thinly sliced strips
candy eyes
optional: 1 tbsp low sodium taco seasoning

HOW TO MAKE:

PREHEAT OVEN TO 350 DEGREES. SPREAD SWEET PEPPERS ON PARCHMENT PAPER ON BAKING SHEET. FILL EACH PEPPER WITH BLACK BEANS. ADD A COUPLE PIECES OF CHEESE ON TOP OF EACH ONE, RESEMBLING A MUMMY.
BAKE FOR 5 MINUTES TO MELT THE CHEESE.
WHEN REMOVED FROM THE OVEN, ADD 2 EYES TO EACH MUMMY ON TOP OF THE CHEESE, GENTLY PRESSING IT DOWN TO STICK.
*OPTIONAL: MIX TACO SEASONING WITH BEANS BEFORE SPREADING ON PEPPERS.
